Marshmallow Brownies!


I was on the hunt for something marshmallowy, gooey, and chocolatey. So I went to all my favorite recipe sites. The search was for Rocky Road Brownies. No good. Then I searched Marshmallow Brownies and found these! They are really not a brownie at all. They are like a chewy, gooey, blondie-type, cookie bar. Sound complicated? They really are not. They are delish! I must share them with you all. The next time your in the mood for brownies or cookies, make these!

Pre-heat your oven to 350 degrees.
Start with 1 stick of butter and 1 cup butterscoth chips melt together in a microwave bowl. 1 minute to start then 30 sec. intervals.



In another large bowl put 2/3 cup of brown sugar, 2 eggs and 1 tsp of vanilla.
Then add melted chips to mixture.
In a smaller bowl mix together 1 1/2 cups of flour, 2 tsps baking powder and 3/4 tsp salt. Stir to combine the dry ingredients. Note: recipe calls for 1/2 tsp of salt, but after tasting I believe it needs added saltiness. I may even bump it up to a full tsp next time I make.
Then add flour mixture to wet ingredients. Wisk it or beat it up real good! Add 2 cups mini marshmallows and 1 cup semi-sweet chocolate chips. Mix well.




Spread mixture evenly into a greased 9x13 pan. Place in a preheated 350 degree oven for 20 minutes. Let bars cool completely before cutting. Note:
The recipe said 15-20 minutes. They definately need the 20 mins. My oven runs hot so it may take up to 25 minutes in a better oven. They should not be overbaked though, so keep a close eye on them. You want them slightly jiggly in the very middle. Get them out of there, kid!

ENJOY! Get your hands on a few, hide a few they will not last long!

1 cup butterscotch chips
2 tsps baking powder
2/3 cup brown sugar
1/2 tsp salt
2 eggs
2 cups mini marshmallows
1 tsp vanilla
1 cup semi-sweet chocolate chips
